Cassava flour is made from the whole cassava root, which is peeled, dried, and ground. It contains fiber and has a texture similar to wheat flour. Tapioca starch is extracted from the starchy pulp of the cassava root. It is a pure starch, very fine and white, primarily used as a thickening agent.
Yes. We source sweet cassava varieties, which have very low levels of cyanogenic glucosides. Furthermore, our thorough processing methods, including peeling, washing, and drying/heating, effectively remove these compounds to levels that are safe for consumption and meet international food safety standards.
