Harvesting Ripe Berries
We start by selectively harvesting fully ripe, red Piper nigrum berries, which contain the mature seed.
Soaking & Rinsing
The berries are soaked in slow-moving water to soften and decompose the outer fruit layer, which is then washed away.

Both come from the same plant (Piper nigrum). Black pepper is made from unripe, dried berries, while white pepper is made from fully ripened berries with the outer skin removed before drying. This gives white pepper a different, more earthy flavor and a sharper, more direct heat.
